Made from tender veal in its own natural casing, this traditional deli item is made from cooked and smoked veal bologna meat, perfectly seasoned. Smooth, tender and delicately flavorful.
The lunchmeat we call bologna or bologna sausage is derived from mortadella, though it doesn't have to be made from pork (and gets a bad rap as a kind of cheap “mystery meat.”)
So, the “bologna” spelling comes from the Italian city it's named for.
