Potato salad "Olivier" is a very popular holiday dish in Russia. It was named after its creator, chef Lucien Olivier, who managed a restaurant of French cuisine in Moscow in the early 60s of the XIX century. Salad "Olivier" is also called "Russian salad" outside Russia.
