Sweet and sour beetroot will refresh you in the summer heat and warm you up in winter, because you can serve it both hot and cold. The homeland of this soup is considered to be Eastern Europe, where it was called kholodnik, and the classic beetroot recipe, known to us today, appeared in Russia. In its traditional form, it is prepared only from a mixture of vegetables with a decoction of young beetroot, but modern chefs and housewives deviate from the classic recipe and add chopped beef or meat broth.

 

Beetroot recipes at home are very simple and quick: dilute the contents of the jar with water in a ratio of 1: 1.5 and boil for 3-4 minutes. You can add half a boiled egg and sour cream to the finished soup.
